CRON Mega-Pancakes

I went ahead and tried the following this morning. My goal was simply

to make an easy storable breakfast that would at least be edible...but

it turned out to be pretty tasty. Here it is:

Mega-Pancakes:

150g whole wheat flour

100g wheat bran

2 egg whites

2 whole eggs

5/8th cup soy protein powder (or substitute)

4 tbsp flax meal

200g raspberries (or substitute)

4 tbsp nutritional yeast

2 tsp baking soda

1 tsp baking powder

½ tsp salt

Hefty amount of cinnamon sprinkled in dough

2.5 tbsp sucaryl calorie free sugar

1 2/3 cup water (can be modified to desired consistency)

Yields 16 pancakes (all depending on how big you make them).

1 serving=

4 pancakes

420 calories

2g omega-3

22g fiber

39g protein

4 servings=

16 pancakes

1680 calories

8g omega-3

88g fiber

156g protein

Top with raspberries, fake sugar, cinnamon.

(Possible substitutions: include more wheat bran, change whole wheat

flour for an alternative, change soy protein powder to another protein

powder, change raspberries to strawberries, blueberries or

blackberries, change amount of water, put sweetener of choice.)

The only " unhealthy " ingredient is whole wheat flour. I'm thinking of

eating this (and its variations) fairly often. Good idea? Any thoughts?

thanks for the recipe. Doug Younkin - if you're out there somewhere

how about adding to the recipe file???

I use whole wheat flour all the time.

Barley flour (I just got some from Bob's Red Mill) has a lower GI than

wheat and has beta glucans. Could also try oat flour or rye flour.

Substitute part of the flour with buckwheat flour (hey, buckwheat

pancakes!).

I recently read a lot about barley at

barley and it's history). I'm not sure about the special barley they

are selling, whether it is worth it or how valid the claims are, but

there seems to be a lot of good info in general about barley.

Doug,

Rye flour does appear to have less calories and more fiber than whole

wheat flour, so if the taste is suitable it will make for an excellent

substitution. Thanks for the suggestion!

Hi ,

i'm new to CRON and i love pancakes. I make mine by using whole meal self

raising flour and only use the egg whites and gently fold them through at the

end. they become lighter an fluffier ( is that a word). you may need to adjust

the protein if you drop the yolks?

There is nothing “unhealthy” about whole wheat flour. To the contrary, see our files about the benefits of whole grains.
