It's just been my experience that I don't need to go out of my way to get them! I would not at all be surprised that heating milk athundreds of degrees celcius would be dangerous. Even Mel Siffadvocated against pasteurized milk. ***Not exactly. Mel was open-minded about the issue, yes. He thought that MAYBE raw milk was a good thing, and he called for the scientific community to further investigate. Also bear in mind that Mel died recently of heart disease at a very young age. For all that we know and think that we know and try to do, there are still so many unanswered questions. We humans hate unanswered questions, don't we? Keep an open mind! That's what Mel was advocating. The hardest thing is life is to do nothing when nothing is the next indicated action. I think this is an area where thetide is turning. Milk has no shown to offer little to not benefits interms of osteoporosis (scary thought, IMHO), probably because thevitamins in milk which aid calcium absorption have been destroyed. ***You could be right. Lots of people think ANY milk is junk food. Raw milk might be risky. Try it. If you fall ill (or not), well there's your answer. (I reeeally hate getting sick on contaminated food. Ever happen to you?)I personally don't favor listening to the common orthodoxy which hasdeclared the benefits of breads and pastas, vegetable oils andhydrogenated margarines. ***I also don't think that advice was ever "common orthodoxy." Even when I was a child in the 50's, whole grains were advocated over refined flours. As for old-fashioned oleo and many vegetable oils, we just didn't have the knowledge about them even a few years ago. Now we know, or think we know, and the tide is turning. Keep an open mind in all things. The science of nutrition is a work in progress, and the editors are hard at work. I've seen many studies already illustrating the benefits of raw milk.It should be reminded that there is a risk of disease but this wouldbe limited if proper measures were taken. ***Absolutely. Try it. I'm inclined to wait awhile longer to hear how you raw milk entrepeneurs fare on the stuff! I recall my grandmother telling me horror stories of people getting sick on raw milk before pasteurization became common practice. But she walked 15 miles to school everyday in the snow, which probably caused some dementia. I guess the only way to resolve it is to actually examine all theevidence, and I'd be interesting in having a look at any studiesyou've seen. I thought I'd bring about a discussion about saturated fats and the potential for insulin response lengthening life, but that doesn't mean I jump completely on the other side of the fence. I practice moderation in almost everything, because, like you said, we just don't have all the answers. But in the meantime, I'd like to know whether to ditch my tofu, switch to whole milk and stop worrying about the saturated fat content of the meat I'm eating. The answers that are desired here are " definitive " ones and I suspect that the certainty which is wished for will not be forthcoming in the near future.
