, your mom's soup recipe sounds fine. It's just about what I do, except I usually put some fresh kale in there. Also, you might try substituting any type of beans for the potatoes, or even lentils (which don't need to be presoaked.) Soup works really well for me and also freezes well. At the grocery, I found some cheap individual-serving-sized freezer containers by Gladware that I use for freezing soup. They go right into the microwave from the freezer. Very handy. Don't be afraid to experiment with soup recipes. Instead of bouillion, I sometimes use plain water with a can of reduced-sodium tomato paste. Just about any herbs you enjoy will compliment this soup base nicely.

I also keep a loaf of Ezekial sprouted-grain bread in the freezer. A slice of this with 1/2 T extra virgin olive oil dribbled over the bread, along with a bowl of homemade soup, is a delightful meal that really satisfies without oinking up your calories. When I'm reeeally hungry, I'll add a chocolate shake to this, as follows: 1 scoop of chocolate whey protein, 1 cup of water with crushed ice, 1 T cocoa powder (for extra choco-umph), extra sucralose, and the magic ingredient of 1/2 teaspoon guar gum powder, which makes it thick.

If you have frozen blueberries, I just throw them into my plain nonfat yogurt and stir the mess around with a little sucralose until the berries thaw out a little. That's breakfast for me, usually.

A third meal is usually some version of Dr. Walford's salad with plenty of dark green leafy things such as spinach, romaine, arugula, etc. If you want to add brewer's yeast to your diet (which you mentioned), I like it sprinkled over the salad just before serving. Some people chop up a truckload of salad vegies once or twice a week so their salads will be ready when they are, but I prefer to make chop mine up fresh. I think the vegetables hold up better in the fridge if they're undamaged by chopping. Recently I've been throwing salsa and guacamole on the salad for "dressing," and it's really enjoyable. If you eat meat, cold fish or chicken can go into your salad. Soy products such as tofu work too, if that's what you prefer. Try edamame in your salad.
