Could also try oat flour or rye flour. Substitute part of the flour with buckwheat flour (hey, buckwheat pancakes!). I recently read a lot about barley at http://eot.com/~nuworld/index.html (see the free online book about barley and it's history). I'm not sure about the special barley they are selling, whether it is worth it or how valid the claims are, but there seems to be a lot of good info in general about barley.
