Barley flour (I just got some from Bob's Red Mill) has a lower GI than

wheat and has beta glucans. Could also try oat flour or rye flour.

Substitute part of the flour with buckwheat flour (hey, buckwheat

pancakes!).

I recently read a lot about barley at

barley and it's history). I'm not sure about the special barley they

are selling, whether it is worth it or how valid the claims are, but

there seems to be a lot of good info in general about barley.
