She had made a pot roast (yum!), mashed potatoes from the box and opened a can on baked beans :-( I brought along some sweet potatoes, onion and olive oil. We sliced the sp and onions, fried them in the olive oil, added a little salt, and everyone wished there were more! I created a new recipe! I know, those of you who are cooks are laughing at me and that's okay. But it is really simple and delicious and full of beneficials! Makes 12 Servings 4 pounds sweet potatoes 2 tablespoons cornstarch 1/2 teaspoon salt or 1 tsp. Creole seasoning 1 1/3 cups unsweetened pineapple juice 1 teaspoons ground nutmeg 2 tablespoons nonfat dry milk powder 3 eggs, lightly beaten 2 teaspoons ground cinnamon 1 tablespoon canola oil 1 small can (8 ounces) unsweetened crushed pineapple, unsweetened flaked coconut walnuts, chopped nonstick cooking spray Preheat oven to 350 degrees. Bake sweet potatoes until easily pierced with fork, about 45 minutes. Let cool, and slip off skins using paper towel. Place sweet potatoes in mixing bowl and mash. Add cornstarch, salt, pineapple juice, nutmeg, milk powder, eggs, cinnamon, and oil; beat. Stir in pineapple and pour into a casserole dish coated with nonstick cooking spray.
