Of the ten vitamins and minerals that B & C covers for cornstarch all record a content of " 0.0 " !!! It also contains zero fat and zero protein. Eight grams of it contains 0.8 grams of water and 7.2 grams of carbohydrate. Almost the perfect empty calorie source! I have used a little of it for many years because of a white sauce recipe I got from one of Pritikin's volumes. Perhaps he liked it because it contains even less fat than wheat flour? Not only is most of it genetically modified but it is high in sugars. It is the source of so much of the sugars on the market today and of course starchy foods are not allowed.
