I used to be a hunter (in my past life) - LOL! When I was expecting my daughter I was out hunting pheasant. I found it to be somewhat dry so I roasted it with lots of bacon tied around it and stuffed inside. In those days I bought 5 lbs. of good raw bacon at a time; no nitrates, unsmoked, no salt, sugar, etc.! Of course that was over 44 years ago! When the bacon got moldy I rubbed it with vinegar and it was fine. It's great you got fat for free! My friend's husband is a hunter and he saved me the liver and heart from the 4 deer they got! Yes, the pheasant was a little dry last night as well. I laid 2 big pieces of fresh raw bacon (nitrite, etc... free) on top of the breast while it cooked to keep it moist, and I stuffed it with diced onion, celery and Mtn Rose Sage. My wife and I ate it all the way down to the bones! I had added 1 cup of water to help it roast in the bottom of the pot in the oven and added some extra onion and celery. After cooking, I had 1.5 cups of fat and broth that I froze to add to my next chicken soup! Doug and it was fine. > > It's great you got fat for free! I miss Three Rivers Market too. Laurel Creek Farm...I had just found out about them a few months before we moved. Their prices are amazing! The bacon was the best ever and only cured with salt. Loved the eggs too. I had been buying from West Wind but the lines and prices were too much. ;-) If you ever decide/get to the point where you want raw milk for your pets, ahem, let me know. If you don't already know, they come to town a couple of times a month and sell the goods at a hardware store parking lot. You can check out their schedule and email them for availability. http://grassorganic.com/ The other milk source is a farm about 20 miles from East Knoxville. She does not make butter though.
