Guest guest Posted January 3, 2008 Report Share Posted January 3, 2008 Hello. I have been struggling with trying to eat locally and seasonally here in northern Minnesota on this diet. As you know we are in the beauty of winter and along with that comes lack of produce. The only produce that could be considered somewhat local and seasonal are root vegetables and winter squash as well as onions because they all keep well. We have been eating a ton of onions with all our meat and fat dishes but it is hard to keep with the traditions of eating seasonal/local because all the root veggies are too high in carbs. I have been eating some red potatoes because I have read that they are a lot less starchier than the other kinds. I think the veggies that travel here from California and Mexico are a lot less tasty and also much more vitamin depleted than the local root veggies. I am torn here.
