Evaporated cane juice is sugar :(

Was this what you were looking for?

Here's something Bee wrote in a December post about bacon.

==>Fresh bacon can still be cured with salt or sugar, and

contain " spices " which often is used to cover up adding bad stuff to

it. I don't know if you can tell by the taste. You can soak bacon

in lemon water or sea salt to help remove additives. Add 1 tbl. of

freshly squeezed lemon juice, or 2 tsp salt, to filtered water (no

chlorine), mix, and put in a low glass pan; add bacon and soak for 24

hours at room temperature. Drain it, and mix another batch of lemon

or sea salt and water, and soak it in the fridge for another 24

hours; drain and cook.

One, it did not indicate whether the lactic acid starter culture is

derived

from dairy or not, and two, it said carbs 0 grams although cane juice

is

listed as an ingredients. Is that possible and is it ok to eat this? I

have

not bought it yet but that's the best I can find around here. It was

$3.99

(on sale) for 12 ounces.

Hi Debra,

Not quite but I appreciate the info. I thought there was a discussion on

whether it's ok to eat bacon that lists evaporated cane juice as an

ingredient but then indicates there are no carbs. Not sure how that is

possible since cane juice is sugar. If the procedure below would work for

the cane juice then I will try it.
