Veggies made easy!

Since my last post on veggies, I've been incorporating some of the

suggestions made here to make veggies more enticing (in particular,

spicing them up.)

However, I've been relying upon frozen veggies which I zap in the

microwave, which I suspect adversely effects their nutritional content.

So, how do the rest of you make veggie consumption easy? Do you chop,

dice, shred every day? Using what devices?

Steam your veggies with just the minimum amt of water either in soup or

stews or alone with spices (garlic powder or fresh chpd garlic adds a nice

zing to most veggies and will almost guarantee consumption by finicky

eaters). Steaming veggies til barely cooked (not limp) or sauteing lightly

in olive oil and seasoning is better tasting (as well as probably healthier)

than microwaving.

I make a large salad virtually every day. But with " spring mix " as my base,

all I have to do is wash . If I want to add extras I add extra Romaine,

(it's just wash and tear into small pieces), sliced red cabbage, onion,

mung beans (i have them cooked and on hand), sprouts, avacado, sometimes a

few nuts. The whole deal takes me about 5 minutes.

Also be sure to check the Recipe file for yummy vegetarian recipes under

" salads and side dishes " , contributed by many of our better cooks.

I find vegetable prep time consuming so when possible I try to do large

batches. I food shop on a 1 week cycle so I will do my vegetable prep once a

week.

Since I use pretty much the same vegetables in several dishes I just prep it

all at once and then freeze them for later use. I have experimented, with

defrosting but not cooking some of the frozen vegetables in some dishes and

it's an interesting alternative in texture (similar to cooked) and taste

(more like fresh).

I suspect the freezing may help rather than hurt nutrient availability due

to breaking down cellular structures (but this is just a personal theory).

About the only time savings I can claim is one setup/clean-up per week vs.

several, but as I've said before IMO vegetables are worth the time/effort.

Whatever suits your tastes, I suppose. I sometimes use mustard, steak sauce,

salsa, Walden Farms Zero Calorie salad dressings, a blend of non-fat sour

cream, cottage cheese, yogurt with garlic and dill, sometimes

gucamole...etc.

I agree with . I like to prepare large batches of veggies ahead of time. Since I work full time and have a family, I can't spend lots of time chopping veggies every day. I shop once a week at a local store that supplies organic veggies. I prepare a large "salad bag". This bag is pretty close to the super salad recommended by Walford to start off with on the CRON diet. I use this as a base for many different varieties of lunch salads throughout the week. Then I have a "stirfry bag" which I fill full of veggies for stir-frying at dinner. These veggies can be used with different types of seasonings and sauces to blend with whatever I'm fixing for dinner for the family.
