mock chopped liver - absolutely delicious!

This is a wonderful recipe for all of us chopped liver fans. The recipe is

completely vegetarian but tastes exacctly like the real thing!

l lb frozen or canned lima beans

3/4 cup walnuts

3 hard boiled eggs

2 large onions

3 TBS canola or olive oil

3 TBS water

seasoning to taste

Chop walnuts in food processor into a fine powder (Note: I am going to try

to make this with fewer walnuts - like 1/2 cup since nuts are high in

calories). Dice both onions. Saute one of the diced onions in one TSP oil.

Drain and rinse beans if using canned beans. If using frozen beans cook them

til soft. Mash well or process beans in a food processor. Add cooked onion,

walnuts, oil and water and mix thoroughly (or put all into a food

processor). Crumble eggs finely with fork. Add eggs and chopped raw onion

and mix well or process all in food processor.

You will marvel at the results!
