I am also vegan, Hakan, and I have just discovered the nutrient

density

(especially in regard to lycopene) in tomato paste. I like to dip

broccoli in it. A 6oz serving costs less than a pound of tomatoes and

has a

lot more lycopene. You can check the other nutrients in it (and many

That is exactly what I do: dip raw broccoli in tomato paste. It

makes the broccoli delicious. I eat raw broccoli almost every day

like this. I've also found that dipping raw rommaine lettuce, green

and red leaf lettuces, cabbages, " spring mix " (baby lettuces,

radicchio, argula, baby swiss chard, baby spinach and other baby

leaves), and raw spinach in pure tomato paste has the same effect----

makes the leafy vegetables taste fabulous, and makes you want to eat

a lot of raw leafy vegetables, which have the highest nutrient

density per calorie of all foods groups.
