If I eat the same thing all the time, I get bored. And that's when I do something stupid. Like today I took someone to their physical therapy appointment. I hadn't eaten and right next door was an einstein bagel. Had a bagel sandwich. Tasted great but about half way through my stomach revolted. So I look for recipes that incorporate our beneficials as a way to keep the variety in my diet and keep me away from the major brain farts. It is hard to always have something ready. I keep pumpkin seeds in my purse but also wonder if there is an O-compliant protein bar available somewhere for such use too? There's a yummy chili recipe in Bee's recipe files too. We always add extra jalepeno and other vegies to it when we make it. We top it off with fresh cilantro, Celtic salt, cayenne pepper and stir in a tablespoon of coconut oil and maybe a fresh crushed garlic clove if we are in the mood for real spicy! Much of the chopping of the chiles, onions and the like could be accomplished in a VM, but ther real trick to the end product is the right " chunkiness " in the finished product -- this is as much from vegetable as from meat/protein. The texture is nearly as important as the flavor in a competition-grade product (which is what I make). Beans in chili is considered an abomination here in Texas, by the way. They've lynched people for less. :-) My own personal chili recipe is a mix between Alton Brown's pressure cooker chili and some of my own cooking techniques/ideas. While I don't have a VM (yet), I can think of a handful of things I'd do in the machine, but would only use it as prep for some of the stuff that goes into the final product (e.g. chopping chiles, onions, etc, and maybe in making the " salsa " that becomes a large part of the base.). The rest is just cooking and patience... Not sure if that helps much, but take it for what its worth.. :-) - Dow, D.C. > > Hello everyone. Sometimes a machine not only fails to give you the desired result but is kind of overkill as well. I fully understand where you're coming from. I grew up in Detroit and we have our own chili that was developed by Greek immigrants and which also lacks beans (you can ask for them to be added, though). It's unique and it's usually served as "coneys"--on hot dogs with raw onions if desired and on fries. I have to say that I really do miss it/them, even after all these years, and there's no way to adapt the recipe for vegetarians because it contains chopped beef hearts (I only recently learned this)--I don't recall any ground meat in it.
