I have been on this diet for more than 2 weeks, and have lost 10 pounds. My wife has been on the diet for the same amount of time, and usually eats 500 calories less per day than I do, yet she still weighs EXACTLY the same as she did when she began. ??????????? I now weigh 141, and she still weighs 100 (at 5'2 " tall). I believe if you stick to it long enough your body will balance out and your weight will begin to migrate towards it's optimal number. Why are you assuming it is the coconut oil causing your weight loss, instead of simply not eating the higher amount of carbs you ate before starting the diet, and your body trying to adjust to a new fuel? I imagine the CO is important in the beginning more because of it's ideal fat content instead of it's antifungal abilities. Hang in there! It is also supposed to help with a sluggish thyroid. If you do a search on " coconut oil weight loss " on google you'll find tons of pages. I have no difficulty getting over 2,800 calories per day following my ratios. Coconut oil does not speed up metabolism, it slows it down, which is very beneficial. The body's digestive system is intended to be slow in order for it to absorb all of the nutrients out of foods. And good fats help absorb those nutrients. In fact coconut oil, which contains lauric acid is reported to be very effective in reversing severe weight loss in AIDS patients; http://www.westonaprice.org/knowyourfats/coconut_oil.html Until your body switches over from running on carbs to running on good fats some people do lose weight because of the low-carb diet. It isn't about the amount of calories either. But weight is the least of your problem when you are unhealthy. It will normalize as you progress.
