Hi Francesca:

I have tried to find a picture of one on Google but haven't been

successful. 'Kikurage' is the japanese name. There are an enormous

number of 'english' names the most descriptive of which

is 'elephant's ear'. The ones I use come dried, are black in colour,

and are crunchy in texture after being rehydrated. I usually cut

them into strips before cooking.

I have never seen nutrient data for them. If I am counting my

nutrients I assume they are the same as for other mushrooms.

Pretty much any japanese food store should have them.
