Sprouted lentils are trivially simple and effortless to sprout. A quart mason jar with cheesecloth (or any breathable mesh) secured with a rubber band works fine. In 3 or 4 days, they are fully sprouted. Harvest before the leaves start to form, while the shoots are tender and luscious, about 1/2 inch long. > > It is not recommended to eat sprouted lentils raw. Yes, sprouted lentils should be cooked gently for a minute or two. And they are wonderful. > > Store bought lentils should sprout with no problem. Yes, they sprout wonderfully well. And very inexpensive. Sprouting increases their volume 10-fold. And their texture and taste are greatly improved too. And cooking time is reduced to only a minute or two. > > Red lentils don't sprout very well, because they tend to be quite > thin. > > If you enjoy the sprouted lentils as much as I do, go shopping online > at Mumm's to find many different varieties of sprouting lentils----- > varieties you will never find at any supermarket. The corner grocer's lentils will sprout. When I hear about sprouted lentils, my heart races with enthusiasm. Lentils are a delicacy that can change the whole nature of a soup. Only a few TBL of sprouted lentils can make many cups of sprouted delicacies. -- Warren
