For lunch, my wife and I ate a Russian salad modified for this diet I thought you might want to try! Russian Chicken/Radish salad Grate 1 radish and soak in water for 20 minutes. (Raw) Boil and chop up one chicken breast. Fry 1 cup of onion in coconut oil or hamburger fat 2 Tablespoons coconut oil/olive oil mayo Dried or fresh dill to taste. Mix all ingredients and enjoy! Serves 2 generously After lunch, we were in Knoxville, so I went to the Fresh Fish Market and bought some ish Salmon (very fatty... they rotate between that and West Coast... this place has fish flown in every day). We also bought a pound of shrimp and a pound of squid. (Russians like squid... she says she'll make a good salad out of it tomorrow... doesn't sound great, but I'll try anything once). Any thoughts as to whether squid are good or bad on this diet? Fresh fish is expensive, but if you stick to the ratios, one small filet serves 2. I bought $50 worth of fish, shrimp and squid. 4 filets of salmon will make 4 meals for us. I sauteed the shrimp tonight in butter with garlic, onions and green peppers and it was delicious!
