When cabbage is fermented it creates lots of good bacteria that pre-digest the cabbage. It doesn't change or add to the actual nutrients, fermentation just makes the nutrients more available. Store-bought sauerkraut are very good and I don't think homemade is better, depending upon the brand, however homemade is cheaper. I buy Karthein's here in Canada.
