A member of our group posted the information about Bubbies and how they process their products, i.e. that they heat it in order to stop the fermenting process, etc., etc. I don't necessarily agree that Bubbies is okay. That is because other processors do not need to heat their sauerkraut, and the question is why they don't, but Bubbies has to? Sauerkraut and other fermented foods stop fermenting when they become cold. So it doesn't make sense to me that Bubbies' sauerkraut would still continue fermenting and bubbling so they HAD TO heat it so it wouldn't overflow their jars ???? If they refrigerate it right away, it stops fermentation making it totally unnecessary to heat it. I've made kimchi and it is a similar process. Fermentation stops when it is put in the fridge. From what I understand fermentation can only take place at certain warm temperatures, i.e. room temperature. Also I bought Bubbies " pure kosher dills relish " and the second time I opened it there was a lot of mold on the top. I've never seen that happen with any other similar product from another company.
