Hi!

I just prepared a whole BIG batch of kimchi. It fermented away for 5 days

and now I put it in the fridge. I tried some out today. It is mildly acidic,

but smells and tastes a bit different to what I'm used to. In fact, I made

two batches and they smell different. They don't smell that bad, but they

don't smell nice. I'm not sure if it's bad or not. How do I know? It tasted

ok. It really is a LARGE quantity and took me quite a while to prepare so

I'd hate to throw it all away...
