A friend served us her tomatillo sauce which was I think one or maybe 2 tomatillos, one jalapeno pepper, and one clove of garlic blended up. She said it mellows out in the fridge, which gave me the idea to ferment it. So I bought pounds of tomatillos, equal weight of jalapenos, and added a lot of garlic. I put some kefir grains in it and let it go. It was OK, but it tasted kefiry to me, so I forgot about it in the back of the fridge. So fast forward six months later and it's delicious! The kefir taste has been mellowing out, but not the jalapeno! Yikes! But it's very good... so I thought I'd share. Quote Link to comment Share on other sites More sharing options...
