Wow! They even studied the types of birds ... I'd have a hard

time eating a baby chick, I think, but they did eat them

in Spain when I was there. Probably they still do: whole

baby birds, you eat the whole thing. Which gives you

a lot of cartilage and minerals and everything else.

BTW there has been some fascinating research

done on cartilage in general ... it's the major

source of glycine which is pretty interesting in

it's own right. Chicken skin has other stuff in it too.

Now I'm getting hungry ....
