Guest guest Posted December 6, 2008 Report Share Posted December 6, 2008 The BEST root beer I've made was when I followed the directions on some root beer extract. I made it for my wedding. It was wonderful! When I've tried to make it with " real " ingredients, I tend to get, well, beer. I think that when you use real roots etc. there are more nutrients for the yeast, and you have to " ferment til it's done " before you bottle it. Or else the bottles explode. So you need to use the usual " homebrew " methods for beer making. But if you just use the extract, and sugar, the yeast die after making the root beer fizzy, and you can actually keep it for some time. And it is not significantly alcoholic. I'm guessing because the yeast don't have enough micro-nutrients to really get going. You can also use " real " ingredients, but just drink it shortly after fermenting.
