Kombucha and kefir, I've been making for some time now, but I'm very new to fermenting things like grains and veggies. I use whey in this process. I've got an autistic grandchild, who's experienced many benefits from fermented coconut water -- made with Body Ecology starter. She loves veggies, and I'd like to introduce her to fermented veggies. I have lots of whey available to me from the kefir process, and would prefer to use that vs purchased starter. My question is, if she has serious dairy allergies, would whey cause a reaction?
