I have never used it. I have only fermented kombucha and kefir. things like

sourkrout seems so unhealthy if you fill it with salt.

Has anyone here ever used Body Ecology's " Cultured Vegetable Starter " to make

unsalted fermented vegetables?

You can ferment without salt. Sandor talks about this. But if you use a good

quality sea salt there is no harm and the quantity used is actually quite

small. Also, adding whey can reduce the amount of salt needed even further.

I have used BE starter culture for kraut and kefir. I use salt now but if I

were to feed kraut to an animal I'd use BE starter culture. I was feeding some

of my kraut to my parrot to cure a bacterial infection. Parrots cannot have

salt. The kraut did cure his infection.
