Guest guest Posted March 13, 2011 Report Share Posted March 13, 2011 The traditional Swiss Meusli, which was invented as a health cereal and often served in Switzerland, involves soaking rolled oats in milk overnight, and adding nuts and dried fruit before eating. I do love oats that way ... much easier than cooking too! Beta glucan is one of those polysaccharides I'm always soapboxing about. I don't think cooking hurts it ... I think it's the " gooey " stuff in oatmeal. Some polysaccharides are really good for microbial health in your gut. Konjac glucomannan is another one. There's a doctor that formulated polysaccharides capsules (he and his capsules are on the net somewhere) and he claims that he cured cancer using polysaccharides. I soak Bob's Red Mill Meusli in Greek yogurt for 30 minutes, and what a treat! Yummo. I eat cooked and raw oatmeal, just to cover all my bases. For nearly 2 years I fed uncooked rolled oats daily to my sick and dying parrot. He lived for alot longer than the other infected parrots that came from his breeder.
