Guest guest Posted April 2, 2011 Report Share Posted April 2, 2011 I'm having the same problem. After reading many posts on the Kefir group I thing my problem is the water quality. Water needs to be mineral rich and have no chlorine - so no tap water. Even though I've been using bottled water my grains are still not growing and only getting smaller. Also, water kefir grains do not grow in a coconut water medium. The sugar used also needs to be mineral rich, as in succinat or Rapadura sugar. I tried many different ways and they never really grew...always got the fizz and the taste I am craving as I did drink it everyday and haven't had any for a week now... I don't know anyone who can give me any to start up again and don't have the extra money to buy new grains off line but someday I will start and would like to know a fool proof way to keep them forever. Guest guest Posted April 2, 2011 Report Share Posted April 2, 2011 I don't know what the deal is either. I tried water kefir twice: the first time exactly the same thing happened. They just would not grow no matter what! Second time: they grew like crazy and I could not kill them. I didn't like the brew much so I didn't keep them up. But I think maybe some strains are just more robust than others. With many bacterial cultures, the cultures are prone to phage infections (viruses that attack bacteria: it sounds like science fiction, but it's true!) and that often is the cause of die-off, or is a reason why a strain works in one house and doesn't in another. It's all about giving the grains some minerals, so maybe?
