When the tea is cooling you can add into it a couple of ounces of white

distilled vinegar to inhibit an invasion of pathogens. Don't let plain sugary

tea cool too long - cooling for several hours gives pathogens a chance to

grow. What you can do: Use a portion of the water called for in your recipe,

making a concentrate. Then put the remaining water into the jar with your scoby

and starter. Then add the slightly cooled sweet tea concentrate to the jar.

The water will temper the too warm tea from the pan. To recap: instead of

putting all the water in the pan to make the sweet tea, you are only putting

into the pan a portion of the water, all the sugar and tea bags. After steeping

the tea bags in the sugar water, cool slightly before adding to the room temp or

cool water that you put in the jar with the scoby and starter.
