Guest guest Posted January 20, 2011 Report Share Posted January 20, 2011 Aloha, I make water kefir and am wondering if I can add tinctures (made with organic alcohol) to it during the fermentation process. First of all, would this hurt the kefir grains, and secondly, would the kefir eat the sugar from the alcohol? Would adding a medicinal mushroom tincture (reishi, shiitake, maitake) kill the grains? If you want to add tinctures, do it just before you drink the kefir ... don't risk killing your grains! I do not think kefir " eats " alcohol. Rather, the alcohol kills the scoby, which I've had happen when I leave the grains in too long while making cider. Acetobacter eat ethanol and make vinegar, eventually.
