All it does is allow you to ferment your pickles in a jar with a lid that won't overflow instead of a crock without a lid. It's a clever idea but at the price of one you could make several of your own, just go to the nearest wine making supply store for lids and fermentation locks. a ----- Original Message ----- From: refusenik2012@... The lids allow a bit of gas to exit ... sometimes some liquid too, which might make a little juice on the counter, but it's not a big deal. They sell plastic lids for Ball jars now, or you can buy some kimchi and just reuse the jar (which is what I do: the kimchi jars are way thicker than Ball jars). I have made both wine and beer, and it is fun! If you are making wine or beer, which are yeast ferments, there is a LOT of gas, and you really do need one of those fermentation locks. They let gas out, but keep flies out too. Wine and beer are both more work than vegie ferments though. Back when I first started, I used some of my beer/wine stash to make vegie ferments, and I added a lock onto a jar cap. It barely bubbled though. Most vegie ferments don't make much gas in any case. I even tried making some kimchi in a plastic bag: again, hardly any gas! Lacto-ferments don't make much gas. The ones with sugar in them (kvass, maybe, or kimchi with added fruit) are the gassy ones.
