Restoring Kefir

i am posting this to several groups...

last week i cleaned out my fridge. this is a rare occurance. way in the back,

in a container, i faced something i had been avoiding since last spring when my

raw milk farmer was forced out of business. my kefir.

there was more than a little guilt attached to this act of irresponsibility!

these grains were entrusted to me with much caring & i had dropped the ball. my

partner had suffered a major breakdown which took all of my time & energy, i was

depleted. many aspects of life had been put on hold for over a year! so it was

with much dread that i retrieved them.

i anticipated dumping the remains into my compost bucket & getting on with life.

a major move is in the works. when i opened the container, it didn't look or

smell as bad as i had anticipated. cautiously i tasted the clotted creamy

residue clinging to the sides. hmmmm... yum! sour yes, but certainly not

rotten. i scooped some grains out, and they were sturdier looking than i had

imagined. how could this be?

i swear they were so happy to see me! i had imagined a dead gloppy

disintegration of mush. i strained off the kefir, did not rinse the grains, and

added whole pasteurized milk. left it sitting on the table and by the next

morning had a container of thick creamy kefir. WOW... pure magic. this

restores my faith in nature! this was a week ago & i am so pleased to have my

wonderful kefir back in my life. has anyone else had similar experiences?
