Ahna,

I don't know what everyone else does, but I push the contents down under the

liquid when I

first pack it in the jar. Then I leave it totally alone until it's ready to

refridgerate.

I use the recipe from Sandor Katz' book Wild Fermentation. I usually throw in a

few more or less items based on what I have available. It's always an 'in

season' creation and always varies a bit. I have trouble with the heat levels

though, usually it's not hot enough for me!
