I let it sit for about 1/2 hour before I pressed it. The pulp that was left is in the freezer. Makes good salsa. After it sits a few days,you'll see the liquid separating to the bottom, andthe mash to the top. When you're ready, you'll have topress it, take the solids from the liquid. When you're ready, you'll have to press it, take the solids from the liquid. Don't throw the solids away! If you can, dehydrate them. I don't know about pressing it. I strained mine thru a strainer. I then put the wet mash on a cookie sheet that I covered with parchment paper, spread it out and put it in my gas oven. I had the temp real low for several hours. I turned the drying mash over, turned the gaa off and turned on the 100 watt bulb in the oven. The next morning I ground it up in my mini food processer. It really smells good. The first taste I took was not bad at all, I was surprised, because I do not like horseradish. I gave my husband some Monday evening and these were his exact words, "Thats not bad." He has been taking it faithfully since. I had gotten a small brown dropper bottle for the famal formula I am making but filled it with the super tonic for him to take to work with him. He will have to bring it home tonight to be refilled for next week. I have not been as faithful in taking it and I am right here at home. In fact I need to go take a dose while I am thinking about it. Have a great day. It is rainy and gray here and has been the last two days. I know the farmers that have their crops in are thankful. Place a piece of muslin, or even a piece of an old white tee shirt, about 1 and 1/12 sq ft, over a bowl. Pour the gunk into it. Take the edges, gather them together, and start to twist/squeeze till you've got most/all of the liquid out of it. What's left will still separate after time. Don't worry. It's fine. Just shake it up before you use it. Even if you don't have a dehydrator, you can still dry the mash in the oven. I'm not too clear on this, so I'll let others advise in this. It is really great on salads and in soups!!! Any questions you have, let us know! Spread the mash out on a tray and turn your oven on low for say 20 minutes....and turn it off and let the mash sit ... after an hour check it... if need be repeat..
