This sounded yummy and simple...using all organic ingredients of course!

OIL AND VINEGAR VEGGIES

1 head radicchio

1/3 cup oil and vinegar dressing

1 tsp. minced thyme

2 carrots

1 each yellow squash and zucchini

1/2 cucumber, sliced

1/2 red onion, cut into slivers

GARNISH: Diced Tomatoes

Line serving bowl, with radicchio leaves. In bowl, whisk together

dressing

and thyme until blended. Using veggie peeler, slice carrots, yellow

squash, and

zucchini into thin ribbons. Place in radicchio lined serving bowl, add

cucumber and red onion. Drizzle with salad dressing. APPLY GARNISH. Makes

4 servings.*
