Its chemically processed to pull out just the sweetning ingredient. Yes, still far better for you than splenda, which in my perception is an extremely dangerous substance to be ingesting. But its not raw complete stevia leaves. It works better than plain stevia for cooking, easier to quantify how much you need, and it dissolves well in any liquid. Also most of the licorice taste is gone, which is a plus for most baked kinds of foods - which usually aren't a great thing for you to be eating anyway though. For tea, hot or cold, or lemonade the stevia leaves are much preferable. For a cold tea start by using a small amount of hot water for your stevia leaves, or leave ample time for diffusion in the sun. The whole leaf is the very best sweetner, has so many good health properties. Not just avoiding the sugar, but has definate additional benefits, including stabalizing of blood sugar levels.
