Homemade Healthy Worcestshire Sauce

I was inspired by an interesting tale from the 1800's. 3

brothers in Europe were trying to make a health tonic and when

complete decided it was way too nasty and put it aside. 3 months

later one found the jar on the back of the shelf and decided to try

it. With the aging it was delicious and what we now know as

worcestshire sauce was born. Looking at a bottle of modern

worcestshire sauce the ingrediants were interesting; vinegar,

molasses, soy sauce, garlic extract, anchovies, and a host of noxious

chemicals. The first two ingrediants caught my eye, " Ahuh, panther

piss. " It looked as if it were made out of wholesome ingrediants

we'ld have a winner of a health tonic.

The next step was to mix apple cider vinegar, blackstrap

molasses, tamari soy, minced garlic, and some anchovy paste. I keep

it in the fridge and it is actually pretty good. The taste is

different from the processed chemical crap but I like the healthy

ingrediants much better. Perhaps if I made up a batch and let it age

properly it would taste even better.

Sorry, I guess I did sort of skip the introduction step. My

name is and I'm in New England and am enjoying gardening

produce and herbs. I love wildgathering and end up giving away a

lot of tinctures and salves and stuff to other people. I've enjoyed

reading the files and posts here through the winter.

The anchovy paste came from Spain and didn't seem to be full

of weird stuff. It takes just a pinch to flavor the mix. I've been

reading Traditional Diets are Your Best Medicine and studying

material from Sally Fallon (Nourishing Diets is one of her books)

that challenge some of the yoga diet ideas that I had picked up in

California. Fermented fish products were an important part of a lot

of people's diets back before commercially processed foods took

over. Don't know if that smudge of anchovy paste is really going to

do the same as the traditional methods (I rather doubt it in fact)

but it is a step I can take to investigate and put into practice

something I'm reading. We'll see if my body likes it or dislikes it.
