Vegetable Marinade

6 tomatoes, sliced into wedges

1 cucumber (if not organic, peel it), sliced and chopped into small pieces

1 small onion, diced

1 1/2 tablespoons of lemon juice

1/8 cup olive oil

Sprinkle in fresh herbs of your choice: basil, parsley,cilantro, oregano, etc.

Add any raw vegetables of your choice

Place sliced vegetables in a large glass bowl. Pour lemon juice and olive oil over vegetables. Sprinkle herbs on top. Cover with plastic wrap and refrigerate. Let sit for two to three hours before serving. Will keep in the refrigerator for seven to ten days. Use as a side dish or on top of sprouts for a quick salad. --From Dr. Kathy Ramsey
