This reminds me of a very simple " snack " my mom always makes. It can

sit in the fridge for quite some time, and it just gets more potent.

Mom cuts up cucumbers into thick slices (thin if you like the veggies

to soften a bit) and she just soaks them in some rice wine vinegar

(WONDERFUL flavor), a bit of sea salt and fresh dill. LOTS of fresh

dill. It's one thing that always SCREAMS summer to me :)

> 6 tomatoes, sliced into wedges

> 1 cucumber (if not organic, peel it), sliced and chopped into small

pieces

> 1 small onion, diced

> 1 1/2 tablespoons of lemon juice

> 1/8 cup olive oil

> Sprinkle in fresh herbs of your choice: basil, parsley,cilantro,

oregano, etc.

> Add any raw vegetables of your choice

> Place sliced vegetables in a large glass bowl. Pour lemon juice and

olive oil over vegetables. Sprinkle herbs on top. Cover with plastic

wrap and refrigerate. Let sit for two to three hours before serving.

Will keep in the refrigerator for seven to ten days. Use as a side
