It can sit in the fridge for quite some time, and it just gets more potent. Mom cuts up cucumbers into thick slices (thin if you like the veggies to soften a bit) and she just soaks them in some rice wine vinegar (WONDERFUL flavor), a bit of sea salt and fresh dill. LOTS of fresh dill. It's one thing that always SCREAMS summer to me > > Vegetable Marinade > > 6 tomatoes, sliced into wedges > > 1 cucumber (if not organic, peel it), sliced and chopped into small pieces > > 1 small onion, diced > > 1 1/2 tablespoons of lemon juice > > 1/8 cup olive oil > > Sprinkle in fresh herbs of your choice: basil, parsley,cilantro, oregano, etc. > > Add any raw vegetables of your choice > > Place sliced vegetables in a large glass bowl. Pour lemon juice and olive oil over vegetables. Sprinkle herbs on top. Cover with plastic wrap and refrigerate. Let sit for two to three hours before serving.
