KALE GUACAMOLE

3 leaves of Lacinato* Kale2 avocado1 clove of garlic2 tablespoons of lemon juice1/2 cup of fresh parsleyBraggs Liquid Amino Acids or Celtic Salt to taste.

Place all the ingredients into the food processor and mix until smooth. Serve on crackers. You can never eat too much kale! Enjoy! *Dinosaur kale is the common name for the kale variety known as Lacinato. It features dark blue-green leaves that have an embossed texture. It has a slightly sweeter and more delicate taste than curly kale. Dinosaur kale was discovered in Italy in the late 19th century. Kale probably originated in Asia Minor. It was a staple in Roman times and during the Middle Ages. English settlers introduced it to the New World in the 17th century. Like most members of the brassica family, kale is descended from sea cabbage which is where it got its waxy, moisture-conserving leaves. . It can be grown from Florida to Alaska and seems to thrive on neglect. Kale's attractive greenery packs over ten times the vitamin A as the same amount of iceberg lettuce, has more vitamin C per weight than orange juice, and provides more calcium than equivalent amounts of cow's milk. Kale’s concentrated beta-carotene content is an excellent source of vitamin A. Both vitamin A and beta-carotene are important vision nutrients. A cup of kale provides 15.4% of the day's needs for manganese. Kale also contains calcium, one of the nutrients needed to make healthy bones.–from new book –from new book "Beautiful On Raw"
