Bavarian CustardRecipe by Elaina LoveServes 4

2 cups young coconut meat1/2 c. coconut water2 Tbs. orange juice (1/2 orange)1/8 tsp. Himalayan Crystal Salt1 pinch-1/8 tsp. turmeric for color1 vanilla bean, chopped or scraped1 tsp. vanilla extract1/4 tsp. almond extract1/4 cup agave nectar or more to taste1 Tbs. soy lecithin1 Tbs. coconut oil or coconut butter

Blend on high until the mixture is creamy. Refrigerate until cool and serve.

I LOVE Elaina love. I've got recipes of hers back when she was Elaine Nigro and was sitting at raw festivals with a baby in her arms trying to make a living on her own.

She is a wonderful human being and if you ever have a chance to take one of her classes, I think she's in northern CA, please do. Or at least go to her website (not sure what it is, but punch in her name in Google and I'm sure you'll get it) and buy her recipes. They are some of the best.
