Guest guest Posted July 21, 2005 Report Share Posted July 21, 2005 Date Squares crust x2 3/4 cup soaked almonds1/4 cup dry almonds1 cup coconut - shredded4 dates - honey dates3 TBSP honey Place the almonds in your food processor and grind them as fine as you can. Add the remaining ingredients and blend until will blended. This should stick together but not be really sticky. If it won't stick together add a bit more honey. Place on a teflex sheet and form into about 1/3 inch thick square. Place in dehydrator at 105 degrees. filling40 dates - honey dates - soft or soaked overnight1/2 cup raisins - soaked overnight1/2 cup currants3 TBSP lemon juice3 TBSP honey3 TBSP sugar cane or add another 3 TBSP honey (the sugar cane can be nice, but some don't like consuming even raw sugar cane, so either sugar cane or honey will do. Place dates in food processor and blend until very smooth. Add the remaining ingredients and mix well but have a little graininess in there from the currants. Spread onto the crust mixture in the dehydrator - you can do this right away. Then make the crust again only keep it on the crumbly side, so keep out a TBSP of honey and see how it is. Place this mixture on top of the date layer and spread. Lightly push the topping down into the date mixture and dehydrate for 4 hours. At this time, cut your cake into squares and spread them out on a regular mesh tray. Dehydrate a few more hours or overnight, depending on your preference. You can store them in the fridge or keep them in an airtight container in the freezer. These are one of my favorite desserts! Enjoy! Suzi What is a weed? I looked at price of almonds at Costco today. $15.80 or such for 2 or maybe 3 pounds..yikes to either price. Recipe looks great.
