The best way to dothat is to eat a high enzyme diet consisting of raw fruitsand vegetables, sprouted seeds, nuts, grains and some seaweed.suzann-Eating predominantly cooked food puts a tremendous strain on your body. To understand why this is true, you need to understand the role enzymes play. Enzymes are inthe cells of every living plant and animal. It is enzyme activity that accomplishes all biological work from blinkingan eye, to lifting a finger, to having a thought.When you eat, you need enzymes to help digest the food. If thefood you eat is raw-whether it is a rutabaga, a carrot,a lettuce leaf or a banana-all the enzymes you need are rightthere in the food itself, ready to go to work for you.If the food is cooked beyond 118 F (48 C), however, thesenaturally occurring enzymes are killed by heat, and yourbody must manufacture its own digestive enzymes to do the job.Is this a problem? The variation withtahini is particularly popular. (See Lesson 6 to find outmore about Tahini.) When you make this pudding, don't throwaway the papaya seeds. They have a wonderful spicy and pepperyflavor. They can be dried and used to flavor other dishessuch as Squash Noodle Salad (see recipe, page 86).1/2 ripe papaya (approximately 1 cup) peeled and seeded1 banana peeled and cut in chunksPut the papaya in a blender and blend just enough to breakup the fruit. Add the banana; blend until smooth. Eatimmediately.
