Guest guest Posted June 20, 2005 Report Share Posted June 20, 2005 Hi All, Last night I made this wheat free, dairy free bread and it turned out pretty tasty. Very easy and nutritious. Enjoy! Amaranth Millet Bread 1/2 cup whole grain amaranth 1 cup boiling water 2 eggs or egg substitute 1/2 cup honey 1/4 cup non-dairy butter, melted (I used 1/8 cup Ghee and 1/8 cup soy margarine) 1 tsp vanilla extract 2 cups millet flour (I used Bob's Red Mill brand) 2 tsp baking powder 1 cup chopped walnuts (recipe called for pecans but I didn't have any on hand) Soak amaranth in boiling water for 15 minutes. Beat eggs well, Add honey and water and beat again. Stir in all remaining ingredients, mixing well. Pour into an oiled loaf pan and bake at 350F for 1 hour and 15 minutes. Makes 1 loaf. Variation: Add 1 cup chopped dates. Soak them for 15 minutes in boiling water along with the amaranth grains. Quote Link to comment Share on other sites More sharing options...
