Guest guest Posted June 22, 2005 Report Share Posted June 22, 2005 Meatless MeatloafServings: 4Ingredients:2 raw white potatoes1 cup onions, chopped1 cup dry bread crumbs or wheat germ1 cup pecans or walnuts2 eggs, well-beaten1 teaspoon saltDash pepperbasil or any other favorite meat loaf spices, like mustard.Instructions:Preheat over to 350. Put potatoes, onions, nuts, and bread through a food processor so it is all ground up, like meat loaf. Mix these ingredients well, then add the rest of the ingredients. Put in well-greased loaf pan and bake until 1 hour or until firm. Stays firm when cold, so it is very good for meatloaf sandwiches. Recipe Courtesy of Sweet Baby Media Meatless Meatballs (Kathy's)Servings: 11 onion, finely chopped1 Clove garlic, finely minced(the crushed Polaner (the crushed Polaner1/2 Cup italian bread crumbs1 Teaspoon beef bouillon1/4 Teaspoon basil1/4 Teaspoon oregano1/2 Cup egg substitute1/2 Cup wheat germ1 Teaspoon salt1 tblsp parsleyBlend the first three ingredients. Add the rest. Form meatballs and fry in pan coated with Pam or other cooking spray. Serve with your favorite spagetti sauce. *****I find that the meatballs taste better if you don't make them too large. Bite size is the best. You can also add a teaspoon of Olive oil to the pan for frying if you wish. Lentil loaf (meatless meatloaf) 1 c Lentils - raw, brown 1/4 c Wheat germ 1 c Breadcrumbs - whole wheat 1/2 c Brown rice 1 Onion - small, minced 3 Eggs 1 t Thyme 1 tb Soy sauce 4 tb Tomato sauce 1 tb Olive oil 2 tb Tabasco sauce Cover lentils with water and cook on a low boil for 1-1/2 hours or until tender. Mash lentils coarsely and combine with remaining ingredients. Pour into well greased loaf pan and bake, covered, at 350 F for 45 minutes. Remove cover and continue to cook for 15 minutes or until loaf is firm to the touch. Serve with your favourite sauce. Servings: 6 Meatless Loaf main dish 1 cup cooked brown rice 1 each egg 2 tablespoon chopped onions 1 teaspoon salt 2 cup crushed peanuts 2 cup cottage cheese 2 tablespoon olive oil 1/2 teaspoon pepper Combine ingredients and bake in loaf @ 350 degrees for about 30 minutes.
