GUT CHURI KIMCHI (Instant Kimchi)

Serves 4

2 cloves garlic, pressed 1 teaspoon ground red pepper 1 tablespoon soy sauce 1 teaspoon rice-wine vinegar 1 teaspoon Asian toasted sesame oil3 cups chopped napa cabbage1 tablespoon kosher salt 1 tablespoon sugar 1 tablespoon sesame seeds, toastedCombine the garlic, red pepper, soy sauce, vinegar and sesame oil in a large bowl. Add the cabbage and mix well. Add the salt, sugar and sesame seed; toss well, cover and let stand until ready to serve. Refrigerate leftovers. Recipe by Leah A. Zeldes
