It was heavenly and everything came up. I wanted to dry the basil, but was too late, so therefore I lost lots of great crop. Our season here in CO has been crazy and no real sign of summer coming forth yet. I'm planning on getting the herbs in grown asap and if I just get some of a crop, it'll be better than store bought. Then you'll have fresh pesto all winter. Here's one....however, I'd make it the regular way (the olive oil and pine nuts are good for you) and serve it over spiralized zucchini instead of pasta. Sharyn Low Fat Pesto SauceI really like pesto sauce, it is an easy treat in the summer when the basil is growing in the garden. But the traditional recipes contain a lot of oil - this version is very tasty, and you needn't feel guilty at all! Ingredients: 2/3 cup chicken or vegetable stock 2 cloves garlic1 cup fresh basil 1/3 cup freshly grated Parmesan cheese2 tablespoons pine nuts Directions: Combine stock and garlic and heat in the microwave on high for 5 minutes (or heat on the stove). Allow to cool. Chop basil in food processor. Add cooled stock, Parmesan cheese and pine nuts. Whirl until everything is finely chopped and blended. Meanwhile, cook pasta of your choice.
