I was surprised at how good it was. I would never have thought it would taste that good. I'm curious to know what you thought of it. I also left out the salt. I made the salad, mixed it all up, tasted it, then sprinkled some cinnamon on top and mixed it up again. Like night and day. I'm so glad you put the cinnamon in it. It gives it a pinch of sweetness and flavor. I personally loved it! Heck...the next time I'm adding even MORE cinnamon! Will it sitting for awhile in the lemon juice/oil dressing make the corn taste a little less raw? I still have some left over from.....Tues? Wed.? It still tastes fine to me. Raw cabbage they're used to in cole slaw, but I don't think too many of them have eaten raw corn before. I'm certainly not going to say anything to them! But it seems to me the dressing should "cook" it somewhat, like a ceviche. I also have chicken breasts marinating in a tequila/lime juice/orange juice mixture with chili powder, garlic and jalapeno. Not vegetarian, I know, but it'll sure be tasty when they come off the grill! The one I like the most (but of course I use many others too) is to chack the following: " What percentages of the RDAs for vitamins and 'minerals' would be satisfied if I were to devote 20% of my entire caloric intake to this one food? " In practical terms, for this particular food, given my caloric intake, this translates into: " what would those percentages be if I were to devote 360 calories a day to watermelon? " The answer (according to CRON-o-Meter) is: 30% of the vitamin RDA and 22% for minerals. That is OK. But not totally brilliant. Compare this with spinach. A mere 360 calories of spinach supplies 74% of the RDAs for vitamins and 90% for minerals. This is, of course, why all serious CRONistas make a point of eating plenty of leafy green vegetables daily.
