It is true that the sugar is used up during the fermentation process, and the longer you ferment the more sugar is used up. If you ferment long enough, you get a very tart tea. Even diabetics can use Kombucha. Also, I don't use black tea. I use a combination of organic green and Puh Er (sp?) teas, so I get the benefit of the cancer fighting and other medicinal properties of these teas. I would suggest that you join the groups listserve if you intend to brew Kombucha. Although it is easy to brew, there are many variables to the process. That is a herbal tea the Ojibwa used for lump medicine. Lumps meaning anything from a cyst to cancer. In the past I have always put the SCOBY in a ziploc bag along with the starter liquid, sealed the ziploc, then in turn sealed that ziploc in a seal-a-meal type bag. This then goes into a Priority VHS shipping box from the post office. Additionally I will only mail out on Monday or Tuesday to ensure that the package gets there before the weekend. I believe that other folks seal the first ziplock into a second one. I worry about that one a bit, seeing visions of the box getting compressed and the ziplocs bursting open. My mother recently gave me a kombucha mushroom, and I have read good things about it, including it is a good pro-biotic and good for candida. Guest guest Posted October 10, 2008 Report Share Posted October 10, 2008 I drank a great deal of Kombucha tea when I was very ill, (had colon cancer). I used to crave it as it seemed to help my digestion greatly, and it was so refreshing. However, I was not able to heal with it, not that it was not good, I just didn't make much progress with it. It just sort of kept me going, able to eat. When I started working with Dr. Biamonte (clinical nutritionist who specializes in candida treatment) I asked him about it. He said it was ok to drink occasionally, but if drunk more than 21 days, the culture can mutate and cause problems. I dropped it like a hot potato. Don't want any iffy stuff. If it is not healing, I try to leave it behind. I am healing well, by the way. Finally over leaky gut, which is a big step. There was a pretty simple test I took to determine if I had it, cost about $100 or so. Then I took lots of glutamine and mucin complex, and cal/mag butyrate, laid off all fermented foods, and of course all fruit, dairy, and all grains. In about 6 months I repeated the test and it confirms it is now healed. You might want to check into doing that test for your child.
