Raw Inspiration - 8/6/05 - Creamy Crisp Taco Mess!********************************************I'm so excited! Even after being entirely thrilled with the variety and flavor of our 100% raw vegan diet for many years we have stumbled upon and modified even more delectable recipes that are just taking our food enjoyment to whole new levels!!! As our current inspiration the famous silent Chef Ito of LA/Orange County Raw Vegetarian Restaurant Au Lac (AuLac.com) writes so brilliantly on his menus: "Why Raw? - Because I LIKE IT!"Here's our new favorite meal...Creamy Crisp Tacos!!!(feeds four)Tacos: 1 organic iceberg lettuce. Peel the leaves and arrange on a plateFillings:-Slice up two avocados on a plate and put on table with a serving fork-Slice up two tomatoes on a plate and put on table with a serving fork-Chop up 2 small hot chili or jalapeno peppers and soak in olive oil in a bowl on table with a serving spoon-Grind up a cup of Brazil nuts or almonds with some cut Wakame (optional) then add 2 teaspoons of olive oil, mix with a spoon and put bowl on table with a serving spoonCream: Blend to a creamy consistency:-meat of 1 coconut -1/2 cup coconut water-1 cup pine nuts-2 teaspoons hemp seed or flax seed oil-1 dateTake a piece of the iceberg lettuce and fill it with the fillings topped with the cream. Wrap the lettuce up or eat it open like a taco.What a lovely drippy mess!!!!!
